Baby Watercress Power Salad

Serves 2 with 10 mins prep

WHAT TO PUT IN

  • 1 bag of Steve’s Leaves Baby Watercress & Little Leaves
  • 75g quinoa
  • Zest & juice of 1 lemon
  • 400g can mixed bean salad, drained & rinsed
  • 1 ripe avocado, diced
  • 100g edamame beans
  • 25g toasted walnut pieces
  • 1 tbsp chopped mint
  • 2 tbsp extra virgin olive oil

WHAT TO DO

Cook the quinoa in boiling water for 15 minutes until tender, drain and cool under cold water.

Whisk the lemon zest and juice with the oil, season and toss into the quinoa with the mixed beans, avocado, edamame beans, walnuts and mint.

Toss gently into the Baby Watercress & Little Leaves and serve.
